Air-dried lumber can only ever reach the EMC of its surroundings. In most of Europe, this means its final moisture content will rarely fall below 14-18%, even after many months or years. While this may be acceptable for outdoor structures, it is far too high for any interior application. Furthermore, the process is slow and can result in uneven drying, with the core of the plank remaining significantly wetter than the surface.

This means completely stripping the piece and starting over, a huge waste of time and money.

This is the ultimate consequence. Imagine a beautiful hardwood floor, installed in October with planks at 16% MC. When the homeowner turns on the central heating in December, the indoor relative humidity drops, and the wood begins to shed its excess moisture to acclimate. As it does, it shrinks. What were once tight joints become unsightly gaps.
The same is true for cabinetry doors that warp and no longer close properly, or tabletops that develop cracks. These are not material defects; they are the predictable results of using improperly dried wood.
